Oranges, the Winter Tomato

No sense eating tomatoes during the winter. The last heirloom beefsteaks—the resonant ones we long for—ebb from gardens and farmers’ markets early October. The hard red objects in stores during the cold months simply resemble tomatoes. It is here that I switch to thin slices of orange to provide brightness and juice for sandwiches and salads.
