Steamed Swordfish with Dill

A quick stint in the microwave imparts juicy succulence to fish. Thinly slice an onion and half a large red bell pepper into a pyrex pie plate. Liven with 2 tablespoons of lemon juice and 2 of olive oil, a sprinkle of sea salt, freshly ground pepper, and ½ teaspoon of dill seeds (or a nice seed head of dill from the garden.) Toss to combine flavors. Nestle a pound and a half swordfish steak into the pan-- half the vegetable mix below, half above. Top with thick slices of beefsteak tomato.

Cover the pan tightly with plastic wrap. Microwave at full power for 6 or 7 minutes. Presto! Serves four with accompanying rice flavored with the vegetables and cooking liquor.
