Jackie’s Balsamic Vinaigrette

6 tablespoons extra virgin olive oil
2 tablespoons balsamic vinegar
small garlic clove, peeled and halved
1/2 teaspoon Dijon mustard
salt and freshly ground pepper

Whisk ingredients together with a fork in a small glass.

The standard vinaigrette proportions, 3:1 oil to vinegar, work well for rich sweet balamic. If substituting sharp sherry vinegar from Spain, use a bit less. Mild Muscat or Champagne vinegar, want a bit more. Fig vinegar requires just a tad of oil.
